Who is responsible for the "explosion" of the food industry? Basically, we eat for nourishment and because we are hungry. I don't remember "chefs" in my youth. We had cooks. We went to a restaurant to eat. On "occasions" we might go out for a lobster meal, generally, though, meat, potato and a vegetable, pie for dessert, that was it.
We ate out the other night, had some guests in from California, I had a steak, NY strip, $30. Not to mention my "drinks" and my wife's meal, fortunately, I don't remember the end of the evening, so not sure what the total bill might have been. In my advanced age, if I do happen to have a drink, possibly two or more, at some time, my mind stops working. No memory from that point on, scary, but at least I don't know what the meal cost. Might have passed out after that, anyway.
Fortunately, the prices are not visible, when reading the menu, in the restaurant, they are also, not visible.
