It would come as no surprise if The Would restaurant in Highland was the visual inspiration for the 1996 film Big Night. It certainly looks the part. Housed in the lower level of a charming, three-story, ivy-covered brick building, the cozy establishment opened in 1926 as the Hotel di Prima, which fed and accommodated weekending Italian-American families from New York.
Its present heyday began in 1994, when the property was purchased by Claire Winslow and Debra Dooley, who rechristened the hotel portion The Inn at Applewood and renamed the restaurant The Would. Winslow, a Culinary Institute of America-trained chef, has a uniquely flavorful style that combines New American cuisine with French flair.
Known for palate-dazzling dishes prepared with local, organic produce, poultry, and other ingredients, and warm, welcoming service, The Would has truly become one of the Hudson Valley’s most beloved eateries. The restaurant has won gold and silver medals from the American Culinary Federation and rave reviews from Zagat and the New York Times.
And it’s not only the sumptuous signature entrees—pan-seared organic chicken filled with collard greens and tomato confit with a braised garlic sauce, just one mouth-watering example—that keep delighted diners coming back. A repeat winner of Wine Spectator magazine’s Award of Excellence, The Would maintains a seasonal cellar populated with approximately 300 bottles of local and international vintages. The on-premises bakery draws raves for its fresh-baked breads, pies, and cakes, and divinely decadent desserts.

Ten BAD resume words ... and more
Ten words that should not be used in a resume, I think the reasons WHY are obvious. I think there are other times they should be excluded also. I picked this up off the Internet and have edited some of their content.
10. Dynamic - According to the Oxford English Dictionary, its primary meaning is “of or pertaining to force producing motion: often opposed to static.” So by using this word, you have literally told your potential employer that you are adept at not being stationary. You are the type of person who does things and moves from place to place.
9. Communication Skills
8. Problem Solving. Both of these guarantee nothing more than the person not being paralyzed by the prospect of a conversation or an empty stapler.
7. Innovative
6. Motivated —Innovative and Motivated, two more generic adjectives suggesting attributes that an employer would probably like to take for granted.
5. Track Record. Note that it is not specified whether this track record is good or bad.
4. Extensive experience.
3. Effective, a promise that when you are being dynamic, you’re really making the most of it.

I danced with my Daughter
I danced with my Daughter on May 30th, 2010.
What is newsworthy about that? Well, my Son Brad got married, at The Would, in Highland, New York, So?
For one thing, my Daughter is one of the owners of The Would. OK!
After the wedding, at the reception, after we all ate, the DJ played music, and people started dancing. OK!
The minister who performed the wedding, Arlene Dawber, was a friend of my Daughter, and had often talked with her, and knew a lot about her past life.
She knew that Debra's Mother and I had gotten divorced in the late 50's, and that I had only seen my Daughter a few times since then, and that we did not see each other for almost 30 years. She knew that we had gotten back together after all that time, and had a few visits together. She knew what a special day this was for me.
During one of the dance breaks, Arlene took the microphone and announced that Debra and her Father, were going to dance. What she didn't know, was that my Daughter and I had never danced together. I am 77, my Daughter, well, is in her 50's, and we had never danced together.
I don't think anyone in the crowd knew what a special moment this was for us, I think only Debra and I knew, and Arlene. I know how I felt, both sad and happy.
So, thank you, Arlene, for giving me that moment, I finally danced with my Daughter.

Who better to run an incredibly seasoned restaurant than by someone who is incredibly seasoned in all shapes of life?
Debra Dooley was born and raised in California. She moved to this area to complete college and set her career in a new, unfamliar area. Within a short period of time, Debra became the first woman ever accepted into the International Brotherhood of Electrical Workers Local 631 of Newburgh, New York, in 1979. Desiring to learn more with a hands on approach, she became involved in Construction and Property Management, which soon led her to the grounds of The Would Restaraunt. After taking over the restaurant with Claire Winslow, Debra quickly transformed The Would into a world of its own. With local artists' works on the walls and a warm glow in the dining room, Debra has created what many call the epitome of "casual elegance."
Debra has had an assertive handle on every aspect of the restaurant. Her relationship with her staff has created a family-type setting, where each member feels more at home at the end of the night than anything else. When she hostesses she greets guests with a smile and takes time to sit and chat with them while they eat. Her dedication to each facet of the restaurant even goes into The Would's Wine Cellar, which, with over 150 wines, has won the Wine Spectator Magazine's Award of Excellence every year, since 1994. And her own words: "I've developed a passion for the business...I want to learn all that I can," shows that Debra will continue to commit her efforts to The Would, so that it can bring her guests an amazing dining experience

What a Day this has been ....
Brad Dooley is married, Bernie is now Bernie Dooley, what a great addition to the family. It was a perfect day at The Would, in Highland, New York.
You can't imagine a more perfect setting for a marriage ceremony.
Right now, it is almost midnight, I am exhausted, and will write more tomorrow and in days to follow.
You'll hear some about Gil, Gail, the minister, Debra Dooley, Dean Dooley, Zach and Ash, and many more. I will also, because of public demand, get a photograph, and tell the story about the "ring," everyone asked about it. I didn't want it to overshadow the ceremony, so I purposely did not wear it to the ceremony.
The food was superb, the surroundings, impeccable, the Colon family, unsurpassed, It was a glorious day. Be sure to check back in the next few days, fotos that you won't want to miss, and more information about the wedding.
It is late, I am sitting on the patio of our motel, beautiful out here, getting a little chilly. Later

The Would in Highland, New York
On a recent trip back East, we discovered some great "out of the way" spots. One such was a place with the strange name of "The Would." We laughed when we first heard of it ........... Who Would ............ We Would ......... that sort of thing, but we drove to this lovely spot, had a delicious dinner, and wanted to learn more about the place.
Originally part of the summer resort, Hotel Di Prima, opened its doors in 1926. The Would Restaurant has a long history of warm hospitality. The Hotel Di Prima catered to Italian families from the New York City area. In the 1940s and 1950s, thousands of vacationing families came to relax and savor the rich summer flavors of “the country.”
In 1994, Claire Winslow and Debra Dooley purchased the establishment and became partners in this famous Hudson Valley retreat. With renovations underway they changed the name of the resort to the Inn At Applewood, and the restaurant to The Would.
Many guests say that "the old resort atmosphere relaxes you and takes you back to slower days." On summer evenings guests enjoy dining on the porch, while watching the boccie players. In the winter they dine by a crackling fire with white linen table cloths, candlelight and fresh flowers.
What more can I say. We roamed around the grounds after dinner for quite a while, it is, in a beautiful setting, and the owners have kept much of the nostalgia which I am sure has been there since back in the 20's.
It really was a walk down "memory lane."
If you are in the area, or near, I suggest you try it out. You will find the ambiance relaxing, and you will almost be transported to an earlier, slower time, when graciousness was king. The food is excellent, they have an award winning wine cellar, all of the appointments are elegant, spotlessly clean, yet a truely warm and friendly atmosphere.
The Would knows how to do it right ..... Highly recommended.
